Ingredients

1.1kg Westholme Farm diced stewing beef 450g/1lb onions
3tbsp oil
1 Garlic clove crushed
225g/8oz button mushrooms
25g/1oz plain flour
½ tsp ground ginger
1tsb medium hot curry powder
1tsp dark muscovado sugar
600ml/1 pint beef stock
2tsbp Worcestershire sauce
2tbsp creamed horseradish
Coriander to garnish

Method

1. Slice the onions and heat 2 tbsp oil in a large frying pan and brown the meat. Drain on absorbent kitchen paper.
2. Lower the heat and add then onions, garlic and mushrooms with a little more oil if necessary. Sauté, stirring occasionally for 3-4 minutes.
3. Stir in the flour, spices, sugar and cook, stirring for a further 1-2 minutes.
4. Add the stock, Worcestershire sauce and seasoning.
5. Return all the meat to the frying pan and bring to a gentle simmer, then transfer to a casserole dish and cover and cook at 170 c/325 f/gas mark 3 for about 2 hours or until the meat is tender.
6. Stir in the horseradish; adjust the seasoning garnish with coriander.
